Ingredients

  • 1 lb cooked shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup Kalamata olives, pitted and halved
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons fresh parsley or mint, chopped
  • Salt and pepper, to taste
  • For the lemon dressing:
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano or Italian seasoning

Instructions

  1. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic, and oregano. Season with salt and pepper to taste.
  2. In a large bowl, combine the shrimp, diced avocado, cherry tomatoes, cucumber, red onion, olives, and crumbled feta.
  3. Drizzle the lemon dressing over the salad and gently toss to coat all ingredients, being careful not to mash the avocado.
  4. Sprinkle chopped fresh herbs over the top.
  5. Serve immediately chilled or at room temperature.
