This Mediterranean Steak Bowl features juicy marinated steak, vibrant vegetables, fluffy grains, and a zesty lemon-garlic dressing for a bold, balanced, and satisfying meal. It’s colorful, customizable, and perfect for lunch, dinner, or meal prep.

Ingredients

  • 1 lb steak (sirloin, flank, or skirt)
  • 2 tbsp olive oil (for marinade)
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice (for marinade)
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups cooked grains (quinoa, rice, couscous, or farro)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/3 cup Kalamata olives, pitted and sliced
  • 1/3 cup feta cheese, crumbled
  • 2 tbsp fresh parsley or mint, chopped
  • Optional: hummus or tzatziki for topping
  • 3 tbsp olive oil (for dressing)
  • 2 tbsp lemon juice (for dressing)
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced (for dressing)
  • Salt and pepper to taste (for dressing)

Instructions

  1. In a bowl, combine olive oil, garlic, lemon juice, oregano, salt, and pepper. Add steak and marinate for at least 30 minutes or overnight in the fridge.
  2. Heat a skillet or grill pan over medium-high heat. Cook steak for 3–4 minutes per side (depending on thickness) or until desired doneness. Let rest, then slice thinly.
  3. While steak cooks, prepare grains according to package instructions and chop vegetables.
  4. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper to make the dressing.
  5. To assemble bowls, layer cooked grains, steak slices, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  6. Drizzle with lemon-garlic dressing and top with fresh herbs. Add a dollop of hummus or tzatziki if desired.
