Mini Fruit Galettes are rustic, individual pies filled with fresh seasonal fruit and wrapped in a flaky crust. They’re easy to make, visually stunning, and the perfect small-batch dessert for any occasion.

Ingredients

  • 1 sheet pie dough (homemade or store-bought)
  • 2 cups fresh fruit (berries, peaches, plums, apples, or a mix), sliced or chopped
  • 23 tbsp granulated sugar or brown sugar
  • 1 tbsp cornstarch or flour
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract (optional)
  • 1 egg (for egg wash)
  • 1 tbsp coarse sugar (for sprinkling crust)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out pie dough and cut into 4–6 circles, about 5–6 inches in diameter.
  3. In a bowl, mix fruit with sugar, lemon juice, cornstarch, and vanilla (if using).
  4. Spoon fruit mixture into the center of each dough circle, leaving a 1-inch border.
  5. Fold the edges of the dough up and over the fruit, overlapping slightly and pressing gently to seal.
  6. Brush crusts with beaten egg and sprinkle with coarse sugar.
  7. Bake for 25–30 minutes until the crust is golden and the filling is bubbling.
  8. Let cool slightly before serving. Enjoy warm or at room temperature, optionally with whipped cream or ice cream.

  • Chill assembled galettes before baking for a flakier crust.
