Ingredients

  • 1 cup unsweetened applesauce
  • 1 cup milk (dairy or non-dairy)
  • 2 large eggs
  • 1/3 to 1/2 cup sugar (adjust to taste)
  • 1/4 cup oil (or melted butter, coconut oil, or extra applesauce)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups old-fashioned or quick oats
  • 1 cup all-purpose flour (or half whole wheat)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional mix-ins: chopped nuts, raisins, chocolate chips, dried cranberries

Instructions

  1. Preheat oven to 350°F. Line a muffin tin with paper liners or grease lightly.
  2. In a large bowl, whisk together applesauce, milk, eggs, sugar, oil, and vanilla until smooth.
  3. Stir in oats and let soak 5–10 minutes.
  4. In a separate bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
  5. Gently fold dry ingredients into wet mixture until just combined.
  6. Divide batter among 12 muffin cups, filling about 3/4 full.
  7. Bake 18–20 minutes, or until a toothpick comes out with a few moist crumbs.
  8. Cool 5 minutes in pan, then transfer to wire rack to cool completely.
