Decadent layered dessert bars made with a chocolate chip cookie dough base, a layer of chocolate sandwich cookies, and rich fudgy brownie batter baked together into one irresistible treat.

Ingredients

  • 1 roll (16–18 ounces) refrigerated chocolate chip cookie dough
  • 2024 chocolate sandwich cookies
  • 1 box brownie mix
  • Eggs, oil, and water as listed on brownie mix package
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. Press the chocolate chip cookie dough evenly into the bottom of the prepared pan.
  3. Arrange chocolate sandwich cookies in a single layer over the cookie dough.
  4. Prepare the brownie batter according to the package instructions. Stir in chocolate chips if using.
  5. Pour the brownie batter evenly over the cookie layer and gently spread to fully cover.
  6. Bake for 35–45 minutes, until the top is set and a toothpick inserted into the brownie layer comes out with a few moist crumbs.
  7. Allow brownies to cool completely before slicing and serving.

Notes

  • Do not pre-bake the cookie dough layer; bake all layers together.
  • Let brownies cool fully to ensure clean slices and defined layers.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days.
  • Freeze fully cooled slices wrapped tightly for up to 2 months.
  • Microwave individual slices for 10–15 seconds for a warm, gooey texture.
  • Substitute peanut butter cookie dough or flavored sandwich cookies for variation.
  • Add chopped nuts or caramel bits for extra texture.
