This cozy breakfast bake combines oats, cinnamon, and tender apples for a warm, comforting morning meal. Naturally sweetened and easy to make ahead, it’s perfect for both lazy weekends and busy weekdays.

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 tsp baking powder
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg (optional)
  • ¼ tsp salt
  • 2 cups milk (dairy or plant-based)
  • 2 large eggs
  • ⅓ cup maple syrup or honey
  • 1 tsp vanilla extract
  • 2 medium apples, peeled, cored, and diced
  • ½ cup chopped nuts (optional – walnuts or pecans)
  • Butter or coconut oil (for greasing the dish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish with butter or coconut oil.
  2. In a large bowl, combine oats, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together milk, eggs, maple syrup, and vanilla extract.
  4. Stir wet ingredients into dry ingredients until combined. Fold in diced apples and nuts if using.
  5. Pour mixture into prepared baking dish and spread evenly.
  6. Bake for 35–40 minutes, or until the top is golden and the center is set.
  7. Let cool slightly before slicing and serving warm.
