These oatmeal chocolate chip bars are soft, chewy, and filled with melty chocolate chips, making them a quick and comforting dessert using simple pantry ingredients.

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 cups old-fashioned rolled oats
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then add the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the rolled oats and chocolate chips.
  7. Spread the dough evenly into the prepared pan and smooth the top.
  8. Bake for 25–30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean or with moist crumbs.
  9. Allow the bars to cool completely in the pan before cutting into squares.

Notes

  • Use old-fashioned oats for the best chewy texture.
  • Add chopped nuts, dried cranberries, or raisins for variation.
  • To deepen flavor, try browning the butter before mixing.
  • Don’t overbake—bars should be slightly soft in the center.
  • Freeze leftovers individually wrapped for a quick future treat.
