Ingredients
1 lb boneless, skinless chicken thighs or breasts
1 tbsp olive oil
1 small onion, diced
3 garlic cloves, minced
1 cup long-grain white rice
2 cups chicken broth
2 tbsp chipotle peppers in adobo sauce, finely chopped
2 tbsp honey
1 tsp smoked paprika
0.5 tsp ground cumin
0.75 tsp salt
0.5 tsp black pepper
1 cup shredded cheese
2 tbsp fresh cilantro or green onions, chopped
Instructions
Heat olive oil in a large skillet or deep pan over medium heat.
Season chicken with salt, black pepper, smoked paprika, and cumin.
Sear chicken on both sides until lightly browned, then remove and set aside.
In the same pan, sauté the diced onion until softened.
Add garlic and cook until fragrant.
Stir in rice and cook for 1–2 minutes to lightly toast and absorb flavors.
In a bowl, mix chicken broth, chopped chipotle peppers, and honey.
Pour the mixture into the pan and stir gently.
Place chicken back on top, cover, and simmer for about 20 minutes until rice is tender and chicken is fully cooked.
Sprinkle shredded cheese over the top, cover again, and cook until melted.
Garnish with fresh cilantro or green onions before serving.
