One Pan Coconut Lime Chicken is a vibrant, creamy, and tangy dish that transforms everyday ingredients into a bold and comforting meal. With tender chicken thighs braised in a luscious coconut-lime sauce, this one-pan wonder delivers tropical flavor in just 30 minutes—perfect for weeknight dinners or cozy comfort meals.

Ingredients

  • 6 boneless, skinless chicken thighs
  • Salt and pepper, to taste
  • 1 tablespoon flour
  • 1/2 teaspoon paprika (optional)
  • 1 tablespoon coconut oil (or neutral oil)
  • Zest and juice of 2 limes
  • 1 tablespoon soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 small shallot, finely chopped
  • 1 small jalapeño, deseeded and chopped
  • 1 teaspoon sriracha (optional)
  • 1 tablespoon tomato paste
  • 1 cup full-fat coconut milk
  • 1/4 cup coconut cream
  • Chopped green onions, cilantro, and peanuts, for garnish
  • Sliced red chili, for garnish (optional)

Instructions

  1. Pat chicken thighs dry and season with salt, pepper, flour, and paprika (if using).
  2. Heat coconut oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes on each side until golden. Remove and set aside.
  3. Lower heat and add garlic, ginger, shallots, and jalapeño. Sauté for 2–3 minutes until fragrant.
  4. Stir in sriracha and tomato paste; cook for 1 minute.
  5. Add lime zest, lime juice, and soy sauce. Stir to combine.
  6. Pour in coconut milk and coconut cream. Bring to a gentle simmer.
  7. Return chicken to the skillet. Partially cover and simmer for 10–15 minutes until chicken is fully cooked and tender.
  8. Spoon sauce over chicken and garnish with green onions, cilantro, peanuts, and red chili if desired.
  9. Serve hot with jasmine rice or noodles.

  • Use chicken breasts or drumsticks instead of thighs if preferred.
  • Adjust spice level by changing the amount of jalapeño or sriracha.
