One-Pan Creamy Chicken & Gnocchi

A cozy, restaurant-worthy one-pan dinner made with tender chicken, pillowy gnocchi, and a rich creamy sauce finished with parmesan and greens. Comforting, filling, and easy to make with minimal cleanup.

Ingredients

  • 500 g chicken breast or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 teaspoon Italian seasoning or thyme
  • 500 g gnocchi (shelf-stable or refrigerated)
  • 1 1/2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 cups spinach or kale

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken with salt and black pepper.
  3. Add chicken to the skillet and cook until golden and cooked through. Remove and set aside.
  4. In the same pan, add the chopped onion and sauté until soft.
  5. Stir in the garlic and Italian seasoning and cook until fragrant.
  6. Pour in the chicken broth and heavy cream, scraping up any browned bits.
  7. Bring to a gentle simmer and add the gnocchi.
  8. Cook, stirring occasionally, until the gnocchi are tender and the sauce thickens.
  9. Return the chicken to the pan.
  10. Stir in the spinach until wilted.
  11. Add parmesan cheese, adjust seasoning, and serve warm.

Notes

  • Add mushrooms or sun-dried tomatoes for extra flavor.
  • Use half-and-half instead of heavy cream for a lighter version.
  • Add red pepper flakes for a spicy kick.
