This One Pot Beef Taco Pasta is a creamy, cheesy, taco-flavored pasta dish made in just 30 minutes. A family-friendly dinner packed with ground beef, pasta, tomatoes, and melted cheese—all cooked in one pot for easy cleanup. Perfect for busy weeknights, meal prep, and Tex-Mex lovers!

Ingredients

  • Ground beef
  • 1 packet taco seasoning
  • 12 oz pasta (penne, rotini, or shells)
  • 1 (14.5 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 2 ½ cups beef broth or water
  • 1 ½ cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1 tbsp olive oil (optional)
  • 2 cloves garlic, minced (optional)
  • 1 cup canned black beans, drained (optional)
  • 1 cup corn kernels (optional)
  • ½ cup diced bell peppers or jalapeños (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add garlic (if using) and ground beef. Cook until browned, breaking up with a spoon. Drain excess grease.
  2. Stir in taco seasoning. Add diced tomatoes, tomato sauce, and broth. Mix well.
  3. Add uncooked pasta to the pot. Bring to a boil, then reduce heat, cover, and simmer for 10–12 minutes, stirring occasionally.
  4. Once pasta is tender and most of the liquid is absorbed, reduce heat and stir in cheese until melted and creamy.
  5. Garnish with chopped cilantro, green onions, or a dollop of sour cream. Serve hot.
