  • 2 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup whole milk ricotta cheese
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp orange zest
  • 1 tbsp fresh orange juice
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream the butter and sugar until light and fluffy.
  4. Mix in the ricotta cheese until smooth.
  5. Add eggs, vanilla extract, orange zest, and orange juice and mix until combined.
  6. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  7. Fold in the chocolate chips.
  8. Scoop dough onto prepared baking sheets, spacing evenly.
  9. Bake for 12–15 minutes, until edges are lightly golden and centers are set.
  10. Cool on a wire rack before serving.

Notes

  • Whole milk ricotta provides the best texture.
  • Cookies are naturally soft and cake-like.
  • Add an orange glaze for extra citrus flavor.
  • Freeze scooped dough and bake with a few extra minutes if needed.
