A crisp and refreshing chopped salad packed with finely diced vegetables, tossed in a tangy vinaigrette, and finished with savory grated Parmesan.

Ingredients

  • 4 cups romaine lettuce, finely chopped
  • 1 cup cherry tomatoes, quartered
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, finely chopped
  • 1/4 cup red onion, finely diced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup croutons

For the dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place finely chopped romaine lettuce in a large mixing bowl.
  2. Add cherry tomatoes, cucumber, red bell pepper, and red onion.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper.
  4. Pour the dressing over the vegetables and toss until evenly coated.
  5. Stir in grated Parmesan cheese and croutons just before serving.
  6. Taste and adjust seasoning if needed, then serve immediately.
