Pearl Barley Soup is a wholesome and hearty dish made with chewy pearl barley, savory broth, and tender vegetables. It’s a nourishing, comforting soup that’s easy to make and perfect for cozy meals any day of the week.

Ingredients

  • 3/4 cup pearl barley
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable broth or chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: 1 cup diced tomatoes, 1 cup sliced mushrooms, 1 cup diced potatoes, or 1 cup shredded cooked chicken

Instructions

  1. Rinse the pearl barley under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat. Sauté onion, carrots, and celery for 5–7 minutes until softened.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Add the rinsed barley, broth, bay leaves, and thyme. Bring to a boil.
  5. Reduce heat to low and simmer uncovered for 40–50 minutes, stirring occasionally, until the barley is tender.
  6. Season with salt and pepper to taste. Add optional ingredients like mushrooms or diced tomatoes halfway through cooking if desired.
  7. Remove bay leaves and garnish with fresh parsley before serving.

  • Include kale or spinach in the last 10 minutes for extra greens.
