This Pineapple Cucumber Salad is a light, refreshing, and tropical salad combining sweet pineapple, crisp cucumber, and a zesty lime dressing — perfect as a fresh side or a healthy snack.

Ingredients

  • 2 cups fresh pineapple, diced
  • 1 large cucumber (or 2 small), thinly sliced or chopped
  • 1/4 red onion, thinly sliced (optional)
  • 2 tbsp chopped fresh cilantro or mint
  • 2 tbsp fresh lime juice (about 1 lime)
  • 1 tbsp olive oil (optional)
  • Salt, to taste
  • Black pepper, to taste
  • Optional: pinch of red chili flakes or 1 sliced jalapeño for heat

Instructions

  1. In a large mixing bowl, combine diced pineapple, sliced cucumber, and red onion (if using).
  2. Drizzle with lime juice and olive oil (if using).
  3. Season with salt, black pepper, and red chili flakes or sliced jalapeño for heat, if desired.
  4. Gently toss everything until well combined.
  5. Sprinkle chopped cilantro or mint over top and do a final toss.
  6. Serve immediately or chill in the fridge for 10–15 minutes to allow flavors to meld.

  • Add diced avocado for creaminess and extra nutrition.
  • Mix in halved cherry tomatoes for more color and juiciness.
  • Use fresh mint instead of cilantro for a cooler, brighter taste.
