These Pumpkin Cheesecake Truffles are a no-bake fall dessert that combines creamy pumpkin cheesecake filling with warm spices, coated in sweet toppings like cinnamon sugar or crushed graham crackers. Perfect for Halloween, Thanksgiving, or anytime you crave a festive treat.

Ingredients

  • 1/2 cup pumpkin puree
  • 4 oz cream cheese
  • 2 tablespoons butter
  • 1/4 cup sweetened condensed milk
  • 1 teaspoon pumpkin pie spice
  • 1 cup graham cracker crumbs
  • 1/2 cup white chocolate, melted
  • 12 drops orange food coloring (optional)
  • Chocolate chips or pretzel sticks (optional, for stems)
  • Cinnamon sugar or crushed graham crackers (optional, for coating)

Instructions

  1. In a nonstick skillet over medium-low heat, combine pumpkin puree, cream cheese, butter, sweetened condensed milk, and pumpkin pie spice. Stir constantly for 8–10 minutes until the mixture thickens.
  2. Remove from heat. Stir in graham cracker crumbs and melted white chocolate. Add food coloring if using.
  3. Transfer the mixture to a bowl and let cool. Refrigerate for 1 hour until firm enough to handle.
  4. Roll into 1-inch balls. Optional: shape like pumpkins using a toothpick or knife and top with chocolate chips or pretzel sticks as stems.
  5. Roll truffles in cinnamon sugar or crushed graham crackers, or dip in white chocolate if desired. Keep chilled until serving.
