Ingredients

  • 1 box yellow cake mix
  • 1/2 cup (1 stick) butter, melted
  • 3 large eggs
  • 1 (15 oz) can pumpkin puree
  • 8 oz cream cheese, softened
  • 1 tsp vanilla extract
  • 1 tbsp pumpkin pie spice (or 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp ginger, 1/4 tsp cloves)
  • 2 cups powdered sugar
  • Optional: whipped cream or vanilla ice cream for serving

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. In a bowl, combine cake mix, 1 egg, and melted butter. Mix until it forms a dough and press evenly into the prepared pan.
  3. In a separate bowl, beat cream cheese and pumpkin puree until smooth.
  4. Add remaining 2 eggs, vanilla, pumpkin pie spice, and powdered sugar. Mix until well combined and creamy.
  5. Pour the pumpkin mixture over the crust and spread evenly.
  6. Bake for 40–45 minutes, until the edges are set but the center is still slightly jiggly.
  7. Let cool completely in the pan. Chill for a firmer texture, or serve warm for a gooier consistency.
  8. Top with whipped cream or vanilla ice cream if desired.
