Quick and Easy Cowboy Butter Chicken is a bold, buttery skillet dinner featuring juicy chicken in a zesty garlic-herb sauce inspired by steakhouse cowboy butter. It’s fast, flavorful, and perfect for busy weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp olive oil or butter (for searing)
  • 6 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1/2 tsp smoked paprika
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives or thyme (optional)
  • Salt and pepper to taste

Instructions

  1. Season chicken with salt, pepper, and paprika on both sides.
  2. Heat oil or butter in a skillet over medium heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, reduce heat and melt butter.
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Stir in Dijon mustard, lemon juice and zest, red pepper flakes, smoked paprika, parsley, and chives or thyme. Season to taste.
  6. Return chicken to skillet and spoon sauce over top. Simmer for 1–2 minutes.
  7. Serve hot with extra sauce drizzled on top.

  • Add a splash of white wine or chicken broth to stretch the sauce.
  • Marinate chicken in lemon juice and garlic for added flavor.
  • Include sautéed mushrooms or spinach for extra veggies.
