Quick Easy Chicken Marsala is a classic Italian-American dish featuring juicy chicken cutlets simmered in a rich Marsala wine sauce with mushrooms, garlic, and cream. Ready in under 40 minutes, it’s elegant enough for guests yet simple enough for a weeknight dinner.

Ingredients

  • 2 large chicken breasts, halved and pounded thin
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 8 oz cremini mushrooms, sliced
  • 1/2 medium onion, diced
  • 3 cloves garlic, minced
  • 3/4 cup chicken broth
  • 3/4 cup dry Marsala wine (not sweet)
  • 1/2 cup heavy cream
  • Fresh parsley, chopped, for garnish

Instructions

  1. Season flour with garlic powder, salt, and pepper. Dredge chicken cutlets lightly, shaking off excess.
  2. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden. Remove and set aside.
  3. Add mushrooms and onion to skillet. Cook until softened and golden, about 6 minutes.
  4. Stir in garlic and cook 30 seconds until fragrant.
  5. Pour in Marsala wine, scraping up browned bits. Reduce by half.
  6. Add chicken broth and bring to a gentle simmer.
  7. Stir in heavy cream and simmer until slightly thickened.
  8. Return chicken to skillet, spoon sauce over, and simmer 5 minutes until cooked through.
  9. Garnish with fresh parsley and serve hot with pasta, potatoes, or rice.
