Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 cups cooked white or brown rice
  • 1/3 cup BBQ sauce (smoky or spicy preferred)
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 2 cups steamed vegetables (e.g., broccoli, corn, bell peppers)
  • Optional: chopped green onions or sesame seeds for garnish

Instructions

  1. Season chicken with salt, pepper, garlic powder, and paprika.
  2. Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 6–8 minutes, or until golden and fully cooked.
  3. In a small bowl, mix honey and BBQ sauce.
  4. Pour sauce over the chicken in the skillet. Stir to coat and let simmer for 2–3 minutes until thickened and sticky.
  5. Serve chicken over cooked rice, with steamed vegetables on the side or mixed in.
  6. Top with green onions or sesame seeds if desired and serve hot.

Notes

  • Use quinoa or cauliflower rice for a lighter option.
  • Add pineapple chunks for a sweet-savory twist.
  • Adjust spice level by adding cayenne or hot sauce to the BBQ mix.
  • Substitute chicken with tofu or shrimp for variation.
  • Perfect for meal prep—store in containers for up to 4 days.
