Quick Jam Donut Focaccia is a sweet twist on classic focaccia bread, combining fluffy dough with pockets of fruity jam. It’s soft, golden, and finished with a sprinkle of sugar—like a giant baked jelly donut, perfect for brunch or dessert.

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp instant yeast
  • 3/4 cup warm water
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 2 tbsp olive oil (plus more for greasing and drizzling)
  • 1/3 cup favorite jam or fruit preserves (raspberry, strawberry, apricot, etc.)
  • Optional: 2 tbsp cinnamon sugar or powdered sugar for topping

Instructions

  1. In a bowl, mix flour, yeast, warm water, sugar, and salt until a sticky dough forms.
  2. Add olive oil and knead lightly until the dough is smooth.
  3. Place the dough in a greased bowl, cover, and let it rise for 30–45 minutes until doubled in size.
  4. Transfer the dough to a greased or parchment-lined baking pan and gently stretch it to fit.
  5. Let rest for another 15–20 minutes while preheating oven to 400°F (200°C).
  6. Use fingers to create dimples across the dough, then spoon jam into each dimple.
  7. Drizzle a little olive oil on top and bake for 20–25 minutes until golden and fluffy.
  8. Cool slightly, then sprinkle with cinnamon sugar or powdered sugar before slicing and serving.

Notes

  • Use thicker jams or preserves so they stay in the dimples while baking.
  • Try a mix of jams for variety or color.
  • Brush with melted butter before topping for extra decadence.
  • Best served warm to enjoy gooey jam pockets.
