Ingredients

  • 12 oz smoked sausage or kielbasa, sliced
  • 1 cup white or jasmine rice (uncooked)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups chicken broth or stock
  • 1 tablespoon olive oil or butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil or butter in a large skillet or pot over medium heat.
  2. Add sliced sausage and cook until browned on both sides. Remove and set aside.
  3. In the same pot, sauté onion, garlic, and bell pepper until softened and fragrant.
  4. Stir in uncooked rice and toast for 1–2 minutes.
  5. Pour in chicken broth and season with salt, pepper, and paprika if using.
  6. Return sausage to the pot, stir to combine, and bring to a boil.
  7. Reduce heat, cover, and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed.
  8. Fluff rice with a fork, garnish with fresh parsley, and serve warm.
