Ingredients
1 (4–5 lb) turkey breast, bone-in or boneless
1/2 cup unsalted butter, softened
4 cloves fresh garlic, minced
2 tbsp fresh thyme, finely chopped
2 tbsp fresh rosemary, finely chopped
2 tbsp fresh parsley, finely chopped
1 tbsp fresh sage, finely chopped
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp lemon zest (optional)
Instructions
Preheat oven to 375°F (190°C).
In a small bowl, mix softened butter with garlic, chopped herbs, salt, pepper, and optional lemon zest.
Carefully loosen the turkey breast skin and spread half of the butter mixture underneath it.
Rub the remaining butter mixture over the outside of the turkey breast.
Place the turkey on a roasting rack in a pan. Drizzle with olive oil and season with a pinch of salt and pepper.
Roast uncovered for about 1 hour 30 minutes, or until the internal temperature reaches 165°F (74°C).
Remove from oven and let rest for 10–15 minutes before slicing.
Notes
You can swap herbs based on season or preference (e.g., dill, tarragon).
For sweetness, mix honey or maple syrup into the butter.
Add smoked paprika for a smoky flavor.
Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
Reheat slices covered in foil at 300°F to retain moisture.
