These Roasted Cauliflower Steaks are tender, golden, and full of savory flavor with crispy edges and a hearty texture. A simple, plant-based dish that works as a main or a versatile side.

Ingredients

  • 1 large head cauliflower
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Remove outer leaves and trim stem of cauliflower, keeping the core intact. Slice into ¾-inch-thick steaks.
  3. Place steaks on prepared baking sheet. Brush both sides with olive oil and season with garlic powder, smoked paprika, salt, and black pepper.
  4. Roast for 20 minutes, flip carefully, and roast another 15–20 minutes until golden and crispy on the edges.
  5. Serve warm with your choice of sauce or side.

Notes

  • For a flavor twist, add curry powder or cumin to the spice mix.
  • Top with tahini, chimichurri, or a squeeze of lemon for extra brightness.
  • Keep the core intact when slicing to help the steaks stay together.
