Roasted Chicken is a classic, comforting main dish with crispy golden skin and juicy, flavorful meat. Made with simple seasonings and roasted at high heat, it’s an easy, reliable meal perfect for family dinners or weekly meal prep.

Ingredients

  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil or melted butter
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme or rosemary (optional)
  • 1 lemon, halved (optional)
  • 34 whole garlic cloves (optional)
  • Fresh herbs such as rosemary, thyme, or parsley (optional, for stuffing)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken completely dry with paper towels to ensure crispy skin.
  3. Rub the chicken all over with olive oil or melted butter, including under the skin if possible.
  4. Season generously with salt, pepper, garlic powder, onion powder, paprika, and dried herbs.
  5. Stuff the cavity with lemon halves, garlic cloves, and fresh herbs if using.
  6. Place the chicken breast-side up on a rack in a roasting pan or in a cast-iron skillet.
  7. Roast for about 1 hour and 15 minutes, or until a thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
  8. Remove from the oven and let rest for 10–15 minutes before carving.
