Roasted pecans are a quick, flavorful, and versatile snack that can be sweet or savory. Perfect for parties, gifting, salad toppings, or healthy snacking, they’re easy to make with endless flavor combinations.

Ingredients

  • 2 cups raw pecan halves
  • 1 tablespoon olive oil or melted butter
  • Optional (savory): 1/2 teaspoon salt, 1/2 teaspoon smoked paprika, 1/4 teaspoon cayenne, 1/2 teaspoon dried rosemary
  • Optional (sweet): 1 tablespoon maple syrup or honey, 1 teaspoon cinnamon, 1 tablespoon brown sugar, pinch of sea salt

Instructions

  1. Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. Place pecan halves in a mixing bowl and toss with oil or butter to coat evenly.
  3. Add your choice of seasonings or sweeteners and mix until pecans are evenly coated.
  4. Spread pecans in a single layer on the baking sheet.
  5. Roast for 20–25 minutes, stirring halfway through, until golden and fragrant.
  6. Let cool completely before storing or serving (they crisp up as they cool).

Notes

  • Try sweet versions with cinnamon and maple syrup or savory with rosemary and garlic powder.
  • Store in an airtight container at room temp for 1 week, or refrigerate for up to 3 weeks.
  • To refresh crunch, reheat in the oven at 300°F (150°C) for 5 minutes.
  • This method works for other nuts like almonds, walnuts, or cashews—adjust timing as needed.
  • Don’t leave pecans unattended in the last few minutes—they can burn quickly.
