Golden, crispy roasted potatoes with tender, fluffy insides. Perfectly seasoned with garlic, herbs, and olive oil, these versatile potatoes make an easy and delicious side dish for any meal.

Ingredients

  • 2 pounds potatoes (Yukon Gold, red, or russet), chopped into chunks
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 1 tablespoon fresh herbs or 1 teaspoon dried herbs (such as rosemary, thyme, or parsley)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or foil.
  2. Wash and chop the potatoes into even-sized chunks.
  3. In a large bowl, toss the potatoes with olive oil, garlic, herbs, salt, and pepper until well coated.
  4. Spread the potatoes out on the prepared baking sheet in a single layer.
  5. Roast for 25–35 minutes, flipping halfway through, until golden and crispy on the edges.
