Ingredients

  • 2 medium sweet potatoes
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder or smoked paprika (optional)
  • 1/2 cup crumbled feta cheese
  • 2 tbsp honey
  • 1 tsp fresh thyme or rosemary (optional)
  • 2 tbsp chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Scrub sweet potatoes and slice into 1/2-inch thick rounds.
  3. Toss rounds with olive oil, salt, pepper, and optional garlic powder or paprika.
  4. Arrange in a single layer on the baking sheet and roast for 20–25 minutes, flipping halfway, until golden and tender.
  5. Top each round with crumbled feta immediately after baking.
  6. Drizzle with honey and sprinkle with fresh herbs or chopped nuts if desired.
  7. Serve warm or at room temperature.
