Rotel Spiced Sausage & Cream Cheese Bites are flavorful, bite-sized appetizers made with spicy sausage, creamy cheese, and zesty tomatoes, all wrapped in flaky dough. They’re easy to make, perfect for parties, and always a hit.

Ingredients

  • 1 lb ground spicy sausage
  • 8 oz cream cheese, softened
  • 1 can Rotel diced tomatoes with green chilies, drained well
  • 1 package crescent roll dough or puff pastry
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cook sausage in a skillet over medium heat until browned. Drain excess grease.
  3. Stir in drained Rotel, softened cream cheese, garlic powder, onion powder, salt, and pepper. Mix until smooth and combined.
  4. Roll out crescent dough or puff pastry and cut into squares or triangles.
  5. Place a spoonful of sausage mixture in the center of each piece, then fold or wrap securely.
  6. Arrange bites on the prepared baking sheet. Sprinkle with shredded cheddar cheese, if using.
  7. Bake for 12–15 minutes or until golden brown and cooked through.
  8. Let cool slightly before serving. Garnish with fresh parsley if desired.

Notes

  • Use mild or jalapeño sausage based on spice preference.
  • Wonton wrappers can be used instead of crescent dough for a crispy version.
  • For extra cheesiness, add Monterey Jack to the filling.
  • Drain Rotel well to avoid watery filling.
  • Serve warm with dipping sauces like ranch or salsa.
