A flavorful and easy pasta salad made with cheese-filled tortellini, salami, mozzarella, and fresh veggies, all tossed in a zesty Italian dressing. Perfect for meal prep, picnics, or a refreshing make-ahead lunch.

Ingredients

  • 12 oz tortellini pasta (cheese-filled or your choice)
  • 1 cup salami, diced or sliced into strips
  • 1 cup mozzarella cheese, cubed or use mozzarella pearls
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook tortellini according to package directions. Drain and let cool completely.
  2. In a large bowl, combine cooled tortellini, salami, mozzarella, cherry tomatoes, and cucumber.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and black pepper.
  4. Pour dressing over the tortellini mixture and toss gently to combine.
  5. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.

  • Add olives, red onions, or bell peppers for more vegetables.
  • Use different tortellini fillings like spinach or pesto for variety.
