  • 2 filets of salmon (Atlantic, King, or Sockeye)
  • 2 tbsp coconut aminos
  • 1 tsp sesame oil
  • 1 tbsp honey
  • ½ tsp garlic powder
  • ½ tsp sea salt
  • For the Spicy Yogurt Sauce:
  • ¼ cup plain yogurt (0% Greek yogurt or any type)
  • 1 tsp hot sauce
  • ½ tsp chipotle powder
  • ½ tsp paprika
  • 1 tsp olive oil
  • For Assembly:
  • 2 cups cooked brown rice
  • ½ cup cooked edamame
  • ½ avocado, sliced

Instructions

  1. Pat dry the salmon and cut into 2-inch cubes.
  2. Combine coconut aminos, sesame oil, honey, garlic powder, and sea salt. Toss salmon in the marinade and let it sit for 3 minutes.
  3. Preheat the air fryer to 400°F (190°C). Cook the salmon cubes for 7 minutes until crispy and caramelized.
  4. Whisk together yogurt, hot sauce, chipotle powder, paprika, and olive oil until smooth to make the spicy yogurt sauce.
  5. In each bowl, add 1 cup of cooked brown rice, top with crispy salmon, edamame, and avocado slices.
  6. Drizzle the reserved marinade over the salmon and generously add the spicy yogurt sauce on top. Serve immediately.

Notes

  • Add more veggies like steamed broccoli or sautéed spinach for extra nutrients.
  • Substitute the salmon with tuna or chicken for variation.
  • Adjust the spiciness with more hot sauce or chipotle powder.
  • For a dairy-free version, use dairy-free yogurt and mayonnaise for the sauce.
