Sausage and Broccoli is a quick and flavorful one-pan meal combining savory sausage, crisp-tender broccoli, garlic, and optional heat and cheese. It’s simple, hearty, and perfect for busy weeknights or healthy meal prep.

Ingredients

  • 1 lb Italian sausage (sweet, mild, or spicy), sliced or crumbled
  • 4 cups fresh broccoli florets
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1 tbsp lemon juice or zest (optional)
  • Grated parmesan cheese, for garnish (optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add sausage and cook until browned and fully cooked, about 6–8 minutes. Remove from skillet and set aside.
  3. In the same skillet, add remaining olive oil if needed and sauté garlic until fragrant, about 30 seconds.
  4. Add broccoli florets and sauté for 2–3 minutes. Add a splash of water, cover, and steam until broccoli is just tender, about 4–5 minutes.
  5. Return sausage to the skillet and stir to combine. Season with salt, pepper, and crushed red pepper flakes if using.
  6. Finish with lemon juice and top with grated parmesan if desired. Serve hot.

Notes

  • Use frozen broccoli in a pinch—just thaw and dry first to avoid extra moisture.
  • Add cooked pasta, rice, or beans to make it more filling.
  • Try swapping broccoli with broccolini or adding other veggies like mushrooms or bell peppers.
  • For a creamy version, stir in a splash of cream or a spoonful of ricotta at the end.
