- 2.5–3 lbs beef chuck roast, cut into large chunks
- 1.5 lbs baby potatoes, halved
- 4 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 medium onion, sliced
- 1 cup beef broth
- 1 tsp fresh thyme, chopped
- 1 tsp fresh rosemary, chopped
- Salt, to taste
- Black pepper, to taste
- 2 tbsp olive oil
- Season beef chunks with salt and black pepper.
- Heat olive oil in a skillet over medium-high heat. Sear beef pieces on all sides until browned.
- Transfer the seared beef into the slow cooker along with halved baby potatoes and sliced onion.
- In a small saucepan, melt the butter and sauté minced garlic until fragrant.
- Add beef broth, thyme, and rosemary to the saucepan. Stir to combine.
- Pour the garlic butter mixture over the beef and potatoes in the slow cooker.
- Cover and cook on low for 8 hours or on high for about 4 hours, until beef is fork-tender and potatoes are soft.
- Before serving, gently stir and adjust seasoning if needed.

- For extra vegetables, add carrots, green beans, or mushrooms.
- For a spicy version, include a pinch of red pepper flakes or cayenne.
- Sweet potatoes can be substituted for regular potatoes.
