Snowflake Sugar Cookie Sandwiches are festive holiday treats made with soft sugar cookies and a creamy frosting filling. Perfectly shaped like snowflakes and fun to decorate, they’re ideal for winter celebrations and gift-giving.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter or cream cheese (for filling)
  • 2 cups powdered sugar
  • 1 tsp vanilla or almond extract
  • 12 tbsp heavy cream or milk
  • Optional: food coloring, edible glitter, sanding sugar

Instructions

  1. Cream butter and sugar until light and fluffy.
  2. Beat in egg and vanilla extract until combined.
  3. Whisk flour, baking powder, and salt in a separate bowl. Gradually mix into the wet ingredients to form dough.
  4. Divide dough in half, flatten into disks, wrap in plastic, and chill for at least 1 hour.
  5. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Roll out dough on a floured surface to 1/4 inch thick and cut snowflake shapes.
  7. Place cookies on baking sheets and bake for 8–10 minutes until edges are lightly golden. Cool completely on wire racks.
  8. For the filling, beat butter or cream cheese until smooth. Add powdered sugar, vanilla, and cream; beat until fluffy.
  9. Spread or pipe filling onto half of the cookies, then sandwich with remaining cookies.
  10. Decorate with powdered sugar, glitter, or icing as desired.

Notes

  • Chill cut-out cookies before baking to prevent spreading.
  • Flavor filling with peppermint, lemon, or almond extract for variety.
  • Roll filling edges in sprinkles or crushed candy for festive texture.
