Ingredients

  • 1 box white cake mix
  • 3 eggs (as directed on cake mix)
  • 1 cup buttermilk (substitute for water in mix)
  • 1/3 cup vegetable oil
  • 1 (8 oz) package cream cheese, softened (optional for richer topping)
  • 1 (3.4 oz) box instant vanilla or white chocolate pudding mix
  • 1 cup cold milk (if using pudding)
  • 1 (8 oz) tub Cool Whip or 3 cups whipped cream
  • 1 cup sweetened shredded coconut (optional garnish)
  • Fresh berries or white chocolate curls for garnish (optional)

Instructions

  1. Prepare the Cake: Preheat oven to 350°F. Mix white cake mix with buttermilk, eggs, and oil until smooth. Pour into a greased 9×13-inch pan.
  2. Bake: Bake for 30–35 minutes or until a toothpick inserted comes out clean. Let cool completely.
  3. Make the Topping: (Optional) Beat cream cheese until smooth. If using pudding, whisk pudding mix with cold milk until thickened. Fold pudding (or cream cheese) into whipped topping until combined.
  4. Frost the Cake: Spread whipped topping mixture over the cooled cake evenly.
  5. Garnish: Sprinkle with shredded coconut and/or fresh fruit. Chill for 1–2 hours before serving.
