Ingredients

  • For the sugar cookie dough:
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup sour cream or Greek yogurt
  • For the cinnamon filling:
  • 1/4 cup unsalted butter, softened
  • 1/3 cup brown sugar
  • 1 tbsp ground cinnamon
  • For the glaze (optional):
  • 1/2 cup powdered sugar
  • 12 tbsp milk or cream
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy. Mix in egg, vanilla, and sour cream or yogurt.
  4. Gradually add dry ingredients to the wet mixture and mix until a soft dough forms.
  5. Roll dough into a rectangle about 1/4 inch thick on a floured surface.
  6. Mix filling ingredients (butter, brown sugar, cinnamon) and spread evenly over the dough.
  7. Roll dough from the long side into a log. Chill in the fridge for 30 minutes.
  8. Slice into 1/2-inch thick cookies and place on prepared baking sheets.
  9. Bake for 10–12 minutes, until edges are set but not browned.
  10. Cool completely, then drizzle with glaze if desired.
