Soft Funfetti Cookies are buttery, chewy cookies loaded with colorful sprinkles, making them the perfect festive treat. Quick and easy to make, they’re ideal for birthdays, holidays, or anytime you want a cheerful sweet bite.

Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup powdered sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • ½ cup rainbow sprinkles

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, sift together flour, baking soda, and salt.
  3. In a separate bowl, beat butter, granulated sugar, and powdered sugar until light and fluffy (about 4 minutes).
  4. Add egg and vanilla extract, mixing until just combined.
  5. Fold in flour mixture until almost combined, then stir in sprinkles.
  6. Scoop dough into 1.5 tablespoon balls and place on prepared baking sheet, spacing apart.
  7. Bake 11–12 minutes, until edges are set but centers are soft.
  8. Cool completely on the baking sheet before serving.

Notes

  • Switch sprinkles to match holiday or party themes (Christmas, Easter, Fourth of July, etc.).
  • Add almond extract for a flavor twist.
  • Mix in white chocolate chips for extra sweetness.
  • If dough is sticky, chill for 30 minutes before baking to prevent spreading.
  • Cookies freeze well for up to 2 months.
