Spicy Rotel Cream Cheese Sausage Balls are cheesy, savory bites packed with spicy sausage, Rotel tomatoes, and melty cheddar. Perfect for parties or game day, these easy-to-make snacks are moist inside, golden on the outside, and full of flavor.

Ingredients

  • 1 lb spicy breakfast sausage (uncooked)
  • 8 oz cream cheese (softened)
  • 1 can (10 oz) Rotel diced tomatoes with green chilies (drained well)
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups baking mix (e.g., Bisquick)
  • Optional: 1/2 tsp garlic powder
  • Optional: 1/2 tsp onion powder
  • Optional: 1/4 tsp red pepper flakes

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the sausage, cream cheese, drained Rotel, cheddar cheese, baking mix, and optional spices.
  3. Mix thoroughly using your hands or a sturdy spoon until fully combined. The mixture will be thick.
  4. Scoop and roll the mixture into 1 to 1.5-inch balls and place them on the prepared baking sheet.
  5. Bake for 20–25 minutes, or until golden brown and cooked through.
  6. Let cool for a few minutes before serving.

Notes

  • Drain Rotel well to avoid excess moisture.
  • Add pepper jack for extra spice or mild sausage for less heat.
