Spicy-Sweet Roasted Honey Carrots are a vibrant, flavorful side dish made with tender roasted carrots coated in a sticky honey glaze, bold spices, and a touch of heat. They’re simple to prepare and bring irresistible sweet, savory, and spicy flavor to any meal.

Ingredients

  • 1 lb fresh carrots, peeled and cut into sticks or rounds
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp chili flakes or cayenne pepper (adjust to taste)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: chopped fresh parsley or thyme for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the carrots with olive oil, honey, garlic powder, paprika, chili flakes, salt, and pepper until evenly coated.
  3. Spread the carrots out in a single layer on the prepared baking sheet, without overcrowding.
  4. Roast for 25–30 minutes, flipping halfway through, until the carrots are tender and the edges are caramelized.
  5. Garnish with fresh herbs if desired and serve warm.
