This Steamed Vegetable Medley is a colorful, healthy side dish featuring a mix of fresh vegetables lightly steamed to crisp-tender perfection. Seasoned simply with olive oil, salt, and herbs, it’s a versatile and nourishing addition to any meal.

Ingredients

  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup carrots, sliced
  • 1 cup green beans or snap peas
  • 1 cup zucchini or yellow squash, sliced (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 12 tbsp olive oil or melted butter
  • 1 tbsp fresh lemon juice or zest (optional)
  • 1 tbsp chopped fresh herbs (parsley or thyme, optional)

Instructions

  1. Wash and chop all vegetables into bite-sized pieces.
  2. Bring a pot of water to a boil and set a steamer basket above it, ensuring the water does not touch the basket.
  3. Add carrots and cauliflower first; cover and steam for 3–4 minutes.
  4. Add broccoli, green beans, and zucchini; steam another 4–5 minutes until vegetables are crisp-tender.
  5. Transfer vegetables to a bowl and season with salt, pepper, and a drizzle of olive oil or melted butter.
  6. Finish with a squeeze of lemon juice and sprinkle of fresh herbs, if desired. Serve warm.

Notes

  • Use any combination of seasonal vegetables you like.
  • Garlic herb butter or parmesan adds extra flavor.
  • For a spicy twist, add red pepper flakes or balsamic vinegar.
  • Don’t overcrowd the steamer to ensure even cooking.
  • Reheat gently with a splash of water to avoid mushy veggies.
