Strawberry blondies are soft, chewy dessert bars filled with fresh strawberries and rich vanilla flavor. They’re buttery, sweet, and bright—perfect for spring and summer treats.

Ingredients

  • 1 cup fresh strawberries, diced
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/3 cup white chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, stir melted butter and brown sugar until smooth.
  4. Add egg and vanilla extract to the butter mixture and mix well.
  5. Fold the dry ingredients into the wet mixture just until combined.
  6. Gently stir in diced strawberries and white chocolate chips (if using).
  7. Spread the batter evenly in the prepared pan.
  8. Bake for 25–30 minutes, or until the top is set and a toothpick inserted comes out with a few moist crumbs.
  9. Cool completely in the pan before slicing into squares.
