Ingredients

  • For the Dough:
  • 1 cup warm milk (110°F / 45°C)
  • 2¼ teaspoons (1 packet) active dry yeast
  • ⅓ cup granulated sugar
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • For the Strawberry Filling:
  • 1½ cups chopped strawberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • For the Cinnamon Layer:
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 1 tablespoon ground cinnamon
  • For the Cheesecake Frosting:
  • 8 ounces cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (to adjust consistency)

Instructions

  1. In a bowl, combine warm milk, yeast, and 1 tablespoon sugar. Let sit for 5–10 minutes until foamy.
  2. Mix in remaining sugar, eggs, and melted butter. Add flour and salt gradually and knead until a soft dough forms.
  3. Place in a greased bowl, cover, and let rise in a warm place for 1 hour, until doubled in size.
  4. While the dough rises, make the strawberry filling: cook strawberries, sugar, cornstarch, lemon juice, and vanilla over medium heat until thickened (5–7 minutes). Let cool.
  5. Roll dough into a 16×12 inch rectangle. Spread with softened butter and sprinkle with cinnamon-sugar mixture. Spoon cooled strawberry filling over it.
  6. Roll tightly from the long edge and slice into 12 rolls. Place in a greased 9×13 inch pan, cover, and rise for another 30–45 minutes.
  7. Preheat oven to 350°F and bake rolls for 25–30 minutes until golden and cooked through.
  8. While baking, prepare frosting: beat cream cheese, butter, powdered sugar, vanilla, and milk until smooth.
  9. Spread frosting over warm rolls and serve fresh.

Notes

  • Add diced strawberries to the dough for extra fruit flavor.
  • Use strawberry jam for a quicker filling.
  • Swirl in crushed graham crackers to the frosting for a cheesecake crust vibe.
  • Unbaked or baked rolls can be frozen for later.
  • For clean slices, use unflavored dental floss to cut the dough.
