Strawberry Crumb Bars with Lemon Glaze are a sweet and tart dessert made with layers of buttery crumb crust, jammy strawberry filling, and a bright lemon glaze. They’re easy to make and perfect for any occasion.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/4 cups old-fashioned oats
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, cold and cubed
  • 2 cups fresh strawberries, chopped
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tbsp granulated sugar (for filling)
  • 1/2 cup powdered sugar (for glaze)
  • 1 1/2 tbsp lemon juice (for glaze)
  • 1 tsp lemon zest (for glaze)
  • 1/2 tsp vanilla extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, combine flour, oats, brown sugar, granulated sugar, baking powder, and salt.
  3. Cut in butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
  4. Press two-thirds of the mixture into the prepared pan to form the crust.
  5. In a separate bowl, toss chopped strawberries with cornstarch, lemon juice, and sugar.
  6. Spread the strawberry mixture evenly over the crust.
  7. Sprinkle the remaining crumb mixture on top of the strawberries.
  8. Bake for 35–40 minutes, or until the top is golden and the filling is bubbling.
  9. Let the bars cool for at least 30 minutes.
  10. In a small bowl, whisk powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth to make the glaze.
  11. Drizzle glaze over cooled bars and let it set before slicing.

  • Add chopped nuts for extra texture.
  • Strawberry preserves can replace fresh fruit in a pinch.
