Crisp, flaky strawberry palmiers made with buttery puff pastry and sweet strawberry filling, baked into elegant, golden cookies that feel bakery-worthy with minimal effort.

Ingredients

  • 1 sheet puff pastry, thawed
  • 1/3 cup strawberry jam or preserves
  • 1/4 cup granulated sugar
  • 1/2 cup fresh strawberries, finely chopped (optional)
  • 2 tbsp powdered sugar, for dusting

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Lightly roll out the puff pastry to smooth seams.
  3. Spread a thin, even layer of strawberry jam over the pastry.
  4. Sprinkle chopped fresh strawberries evenly over the jam if using.
  5. Sprinkle granulated sugar evenly over the surface.
  6. Fold both long sides of the pastry inward toward the center.
  7. Fold each side inward again so the rolls meet in the middle and gently press together.
  8. Slice into 1/2-inch pieces and place cut-side up on the baking sheet.
  9. Bake for 14–16 minutes until puffed, golden, and caramelized.
  10. Cool slightly and dust with powdered sugar before serving.

Notes

  • Keep the jam layer thin to prevent leaking.
  • Lemon zest adds brightness to the filling.
  • Raspberry or apricot jam works well as substitutes.
  • Best enjoyed the day they’re baked.
