Strawberry Rhubarb Bars are a deliciously sweet and tangy dessert made with a buttery oat crust, jammy fruit filling, and a golden crumble topping. They’re the perfect seasonal treat for spring and summer.

Ingredients

  • For the crust and topping:
  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 3/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • For the strawberry rhubarb filling:
  • 1 1/2 cups chopped strawberries (fresh or frozen, thawed and drained)
  • 1 1/2 cups chopped rhubarb (fresh or frozen, thawed and drained)
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking dish with parchment paper.
  2. In a bowl, combine flour, oats, brown sugar, granulated sugar, salt, and baking powder. Stir in melted butter and vanilla until crumbly.
  3. Press about two-thirds of the mixture into the bottom of the prepared pan to form the crust.
  4. In a separate bowl, toss strawberries, rhubarb, sugar, cornstarch, lemon juice, and vanilla until well combined.
  5. Spread the fruit mixture evenly over the crust.
  6. Sprinkle the remaining oat mixture on top of the fruit filling.
  7. Bake for 40–45 minutes, or until the topping is golden and the filling is bubbling.
  8. Cool completely in the pan before slicing into bars to ensure clean cuts.

Notes

  • Add chopped almonds or walnuts to the topping for extra crunch.
  • Use more strawberries and less rhubarb for a sweeter flavor.
  • Sprinkle cinnamon or ginger into the filling for a spiced twist.
  • Make it gluten-free by using almond flour and certified gluten-free oats.
  • Cool completely before slicing to prevent a soggy crust.
