Strawberry Sandwich is a light and sweet Japanese-inspired dessert made with soft white bread, fluffy whipped cream, and fresh strawberries. It’s easy, elegant, and perfect as a snack, brunch item, or no-bake treat.

Ingredients

  • 4 slices soft white bread (crustless preferred)
  • 1 cup heavy cream or whipping cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract (optional)
  • 1/4 cup mascarpone or cream cheese (optional, for richness)
  • 68 fresh strawberries, washed, hulled, and halved

Instructions

  1. In a bowl, whip heavy cream with powdered sugar and vanilla (if using) until stiff peaks form.
  2. Optional: Fold in mascarpone or softened cream cheese for a richer filling.
  3. Spread a generous layer of whipped cream onto one slice of bread.
  4. Arrange halved strawberries cut-side down on the cream.
  5. Spread more cream over the strawberries and top with another slice of bread. Press gently.
  6. Wrap the sandwich tightly in plastic wrap and chill for at least 30 minutes to firm up.
  7. Slice in half or diagonally to reveal the strawberries. Serve chilled.
