These Sweet Cherry Crumble Bars are buttery, fruity, and layered with a sweet-tart cherry filling between a tender crust and golden crumble topping. They’re easy to make, comforting, and perfect for sharing or enjoying with a warm drink.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, cold and cubed
  • 1 teaspoon vanilla extract
  • 2 cups cherry pie filling or pitted sweet cherries
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mix flour, granulated sugar, brown sugar, and salt. Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs. Stir in the vanilla extract.
  3. Press two-thirds of the crumb mixture into the bottom of the prepared pan to form the base.
  4. In a separate bowl, combine the cherry pie filling (or sweet cherries), cornstarch, and lemon juice. Mix well and spread evenly over the crust.
  5. Sprinkle the remaining crumb mixture evenly over the cherry layer.
  6. Bake for 35–40 minutes, or until the top is golden brown and the filling is bubbly.
  7. Let the bars cool completely in the pan before slicing to allow them to set properly.

Notes

  • Use sour cherries for a tart variation.
  • Add sliced almonds or a pinch of cinnamon to the crumble for extra depth.
  • Ensure bars are fully cooled before slicing for clean edges.
