Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tbsp olive oil or sesame oil
  • Salt and black pepper to taste
  • 2 cloves garlic, minced
  • 1/3 cup sweet chili sauce
  • 1 tbsp soy sauce or tamari
  • 1 tbsp rice vinegar or lime juice (optional)
  • 2 cups cooked white or brown rice
  • 1/2 cucumber, sliced or julienned
  • 1 carrot, shredded or ribboned
  • 1 red bell pepper, thinly sliced
  • 2 green onions, chopped
  • 2 tbsp fresh cilantro (optional)
  • 1 tbsp sesame seeds (optional)
  • Lime wedges (optional)

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat oil in a skillet over medium-high heat. Sear chicken thighs for 4–5 minutes per side until golden and cooked through.
  3. Reduce heat, add garlic, sweet chili sauce, soy sauce, and vinegar or lime juice. Simmer until glaze thickens and coats the chicken.
  4. Let chicken rest, then slice into strips or chunks.
  5. Assemble bowls with rice, topped with chicken, vegetables, and garnishes.
  6. Drizzle extra sauce over top and garnish with sesame seeds and lime wedges if desired.
