Sweet & Spicy Garlic Noodle Stir-Fry is a quick and flavorful dish made with noodles, garlic, soy sauce, and fresh vegetables. Packed with sweet, spicy, and savory notes, it’s an easy weeknight dinner that’s endlessly customizable and better than takeout.

Ingredients

  • 8 oz noodles (rice noodles, ramen, or spaghetti)
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar or honey
  • ½1 teaspoon chili flakes or 1 tablespoon sriracha
  • 1 tablespoon rice vinegar or lime juice
  • 1 teaspoon sesame oil
  • 1 tablespoon neutral oil (for stir-frying)
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 2 green onions, chopped
  • Optional add-ins: tofu, cooked chicken, shrimp, broccoli, snap peas, mushrooms

Instructions

  1. Cook noodles according to package instructions. Drain and set aside.
  2. Heat neutral oil in a large pan or wok over medium heat. Sauté garlic for 30 seconds until fragrant.
  3. Add sliced vegetables and stir-fry for 3–5 minutes until just tender.
  4. In a bowl, whisk together soy sauce, brown sugar, chili flakes, vinegar, and sesame oil.
  5. Add noodles and sauce to the pan. Toss to combine and heat through.
  6. Top with chopped green onions and more chili sauce if desired. Serve hot.
