Cheese tortellini tossed with crisp vegetables, savory deli meats, and a creamy, zesty dressing for a bold and satisfying grinder-inspired pasta salad.

Ingredients

  • 20 ounces refrigerated cheese tortellini
  • 1 cup shredded romaine lettuce
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup sliced pepperoncini
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup sliced salami, chopped
  • 1/2 cup sliced turkey
  • 1/2 cup shredded mozzarella cheese
  • For the dressing:
  • 1/2 cup mayonnaise
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the tortellini according to package instructions, then drain and let cool completely.
  2. In a small bowl, whisk together mayonnaise, red wine vinegar, Dijon mustard, oregano, garlic powder, and black pepper.
  3. In a large bowl, combine cooled tortellini, shredded romaine, cherry tomatoes, pepperoncini, red onion, salami, turkey, and mozzarella cheese.
  4. Pour the dressing over the salad and toss gently until evenly coated.
  5. Refrigerate for at least 30 minutes to allow flavors to blend.
  6. Toss again before serving and adjust seasoning if needed.
